William Fevre 08 Petit Chablis
William Fevre 07 Petit Chablis is developing and peaking beautifully. Gone is the sea shell chalky acidity's and here are the developing secondary over tones of grapefruit , candied lime and creamy sourness or a wine happily hitting it's straps. Still with a long future ahead . A suggested drinking window of between 4-6 years under careful cellaring. I've noticed an emergence of this style in quite a few current vintage Aussie Chardonnays. If this is the direction we are setting for ourselves I for one am all for it.
